Happy What I Ate Wednesday!

So I totally had a whole slew of pictures from the other day all set and ready for the party…all I needed was to transfer them from my camera and do a little editing…and I totally forgot to do that before I left the house today!

Sooooooo, instead, how about some random deliciousness that’s yet to make it off my computer over the last month? πŸ˜‰

Just in time for summer, I’ve rediscovered my love of hot steamy oats…and what better way to have them than OIAJ (oats in a jar) topped with banana and cinnamon?

But on the days where I opt NOT to sweat all over my breakfast, I’ve been loving on some fried egg sandwiches (with Vegemite of course), cottage cheese with cantaloupe, blueberries, and cinnamon (rockin’ combo by the way), and Greek yogurt topped with granola, fresh fruit, crushed up Nerdy Birdy cookies…eh, pretty much anything goes with me!

I’ve also been doing some major damage on the fresh veggies I’ve been carting home from the farmer’s market each weekend!

Hellllllllllloooooooo salad beast!

Baby spinach, portobellos, roasted red peppers, corn…you name it! But what really makes a salad is the toppings…actually, that might be the REAL reason why I’ve been eating so many lately! πŸ˜‰

Nutritional yeast, Mrs. Dash, and salsa are nothing new, but what I’ve seriously been loving is the added CRUNCH of crushed up Beanitos or roasted soynuts!

Along with my mountainous salads, I’ve also been having fun DRINKING my veggies!

Yep, I’m not really having a problem with that part of my goals for the month!

I still can’t get over the surprise every time I throw random combos of fruits and veggies in the juicer and out pops something so fresh and delicious!

And well, since the theme this month IS sensible snacking…

Mmmm, snackages!

Gotta give a shoutout to my girl Debbie for introducing me to Snackimals and also Lizzi for sending me these amazing Bounce energy balls…just what I needed at work the other night when the sleepiness came!

  1. mmmmm all your pics are awesome! That salad beast is awesome! I think my favorite salad topping is probably mushrooms. I don’t always have them handy to put on salads so when I do they are kind of like a treat. Love them!

      I have to agree. Since they don’t stay as fresh the other veggies, they always seem like a treat! I would have had more on my salads this past week, but I’ve become obsessed with pan frying/roasting them! Yum!

  2. I love a little crunch on my salads with some granola or crushed up chips. When I want something sweet, some dried fruit always helps. Oh, and the nooch, yes, thats a must!

  5. Mmm I’m so jealous of all your fresh juices! I have to shell out $6-7 for something like that at one of our local vegan cafes! πŸ˜›

    Favourite salad topper? I don’t think I could choose just one! Avocado, toasted almonds, applewood smoked cheddar, roasted sweet potatoes, apples… they’re all so good!

      Applewood smoked cheddar?! Oh wow, that sounds amazing!

      Next time you’re craving a juice from one of those cafes, put the money you’d use in a jar…after about 10-12 times, you’ll have enough to buy a juicer! πŸ™‚

  6. I LOVE soynuts! So yum πŸ™‚ My favorite snack to help me through the 3 o’clock slump at work is fruit! They’re light, refreshing, naturally sweet and delicious. But my go-to is always a small handful of raw almonds. Protein to help me get through the last part of the day!

  7. Oh! I meant to also add that my favorite kind of dressing is salsa! Especially if it’s good and hot. I also do a mustard/hot sauce mixture thing, or just hot sauce (Franks Red Hot to be exact) OR I’ll use cottage cheese and black pepper!

      You are TOTALLY speaking my language girl…although I’ve never tried the hot sauce. Hmm… My go-to’s are always salsa, cottage cheese, or hummus!

    Girl can you make my salads?! HOLY SMOKES! Those babies sure are loaded!! I am horrid at making homemade salads. Youd think that would be something pretty easy to do right? lol

      Haha! Thank you! Half the time, I don’t know if I’m making lunch or a work of art…I just start throwing colorful things on the plate until it looks pretty/yummy! πŸ˜‰

  9. YUM!!! Vegetables!!! Hummus and nutritional yeast are my favorites! To ward off sleep…APPLES! Crunchy, sweet and delicious!

  14. That’s a lot of awesome all in one place. Fav salad topper is hard to decide, but contenders are sunflower seeds, olives, and shredded cabbage.

  15. I’ll have to get some beanitos as well then. I love nutritional yeast flakes and use the same brand πŸ™‚

    Those roasted veggies look delightful and I love the clear bowl they are in!

    Also I need to figure out where to get those Beanitos that we got at Blend..thanks for reminding me!

    I also adore those soynuts and used to get them all the time! So many yummy reminders/food inspiration on one page!

      Thanks girlie! The bowl is a Pyrex…I buy them in all sizes for my lunches so I don’t have to worry about bringing something to heat up in plastic that may or may not cook into my food and get into my belly! o.O The only place I’ve seen the Beanitos is online…iHerb has them for $2.95 a bag sold individually and that’s the cheapest I’ve found unless you want 24 of those suckers all at once! http://www.foodservicedirect.com/product.cfm/p/1951797/Beanitos-Black-Bean-Chips.htm <- only a little over a buck a bag! Hmmm, I might have to think about that! Can you believe I've just recently discovered soy nuts? I mean, where HAVE I been?? Lol

    I honestly had no idea they made sugar free peanut butter! Love chobani 2% though πŸ™‚ Great eats.

      It’s just like having a natural peanut butter…the only ingredient is roasted valencia peanuts…they just advertise it on the label on this brand for some reason. Maybe to lure in the diabetics? It’s like the GF scam! Ahhh! Lol

      Omg, they are INCREDIBLE!! And they totally don’t ship to the US! πŸ™ But I made a special request with my personal international snack fairy, so hopefully I’ll see some more in the near future!

      Vegemite ROCKS! What the heck was I thinking fooling around with Marmite? You Aussies definitely know how to do delicious!

    OOOh fresh veggies from the farmers market are AMAZING! I think my favorite salad topping is roasted chickpeas – love, love, love them.

    A quick pick me up snack when I’m feeling sleepy is either a banana or dark chocolate. Usually the reason I get drousy is because my blood sugar is looooooow, so I need something sweet to get me going again.

  24. Everything looks so good! I’ve been loving juicing lately too! My favorite thing to add in with the fruits and veggies is a little chunk of ginger…mmmmmm….
